The town of Jesus-Maria (elev. 6,920') is home to Rancho El Olvido, Tequila's highest altitude distillery. This boutique taberna is perfectly suited to produce Seleccion de 1079 Blanco Tequila in small artisan batches of intensely aromatic, fruit forward Tequila, owing to a porous soil and extreme climate that "stresses" the Agave in order to produce a higher brix content and complexity. This provides a strong emphasis on the Agave flavor.
